Dating back to 1500 BC, sourdough is the oldest form of leavened bread. Its natural fermentation process means there is much less sugar in sourdough than other bread. This lowers its glycemic index and lessens it’s affect on your blood sugar (and the crash that follows).

It’s also more acidic than regular bread. This gives sourdough its unique taste. It’s also the reason you should avoid using plastic or metal cookware as it will interact and corrode.
